WHAT IS IT?
A phonetic spin on the word 'Ochre' this is Australia's answer to Campari. The riberry (otherwise known as Lilly Pilly) is the star botanical in this aperitif. Its cranberry-tartness, hints of clove and bark-like bitterness make it well-suited for an Australian aperitif. Aside from that, there's Lemon Myrtle, Gentian Root, Licorice Root, Wormwood, Sweet Orange Peel, Cassia Bark and Cinchona Bark (to name a few).

WHO'S BEHIND IT?

The masterminds behind Applewood Distillery in South Australia are Brendan and Laura Carter. Originally (and still) a winemaker, Brendan studied at S.C.Pannell Wines under Stephen Pannell, a celebrated winemaker from Southern Australia. Brendan was Brendan was responsible for Adelaide Hills Syrah, an aromatic wine, that won the prestigious Jimmy Watson trophy in 2014. Laura herself is no stranger to the wine industry, having worked at Henschke, a 148-year old winery in Australia. The distillery constantly experiments with its distillations and aside from the Okar and Red Okar, also distills gin, amaro and whisky.
